The Digital Pro controller
The dial and the display
The manual, page 12, and Traeger support. The Digital Pro has a dial, a 3-digit display, a power rocker and a Probe Selector: no menu, no timer, no Wi-Fi and no settings. The dial and display are marked in °F.
- Turn the dial to SHUT DOWN CYCLE at the end of every cook: the fan runs for about 10 minutes, then the grill turns itself off. Left there, the grill will not power up (the display flashes).
- Turn it to SMOKE for the lowest heat: about 71 to 82 °C (160 to 180 °F).
- Turn it to a number from 180 to 375 °F (82 to 191 °C) to cook: the controller feeds pellets to hold that temperature, to about ±8 °C (±15 °F) (Traeger).
- Turn it to HIGH for the most heat: it levels out at about 218 to 232 °C (425 to 450 °F), the grill's maximum.
- Read the display: the grill temperature, a probe temperature after you press Probe Selector, or a code.
- Use the rocker on the controller face (O off, I on) as the main power switch.
Meat probes and the safety alarms
The manual, pages 20 and 21.
- Plug the meat probe into Probe 1 (or Probe 2) on the controller.
- Run its lead through the silicone grommet on the left end of the barrel.
- Push the tip at least 5 cm (2 in) into the thickest part of the meat, clear of fat and bone.
- Press Probe Selector: the display shows that probe's temperature for 5 seconds, then the grill temperature again.
- Check the reading with an instant-read thermometer before you take the meat off (the manual).
- Know the two alarms: LEr if the grill stays below 49 °C (120 °F) for 10 minutes, HEr above 288 °C (550 °F). Either turns everything off until you switch off at the rocker: see the codes.
