The manual: "Do not repair or replace any part of the oven unless specifically recommended in this manual. All other service should be referred to a qualified technician." And: "Do not modify the appliance."

• Ooni's help centre gives owner methods for: cleaning the piezo and thermocouple, tightening the flame safety nut, changing a UK regulator, and the US natural-gas conversion. Each says: if you do not feel comfortable, ask a local gas engineer.
• A qualified agency only: the fixed propane tank conversion (North America manual).
• Ooni support only: the stone, burner, valve, thermocouple, knob and legs. No spares are sold online.
