Cold weather and damp

  1. Use propane. On the 28, 37 and 50 mbar ovens, butane gives a long, sooty yellow flame (Essentials Guide).
  2. Add 5 to 10 minutes to the preheat in the cold (Essentials Guide).
  3. Rain and snow do not affect cooking, but water on the hot shell can discolour it (help centre).
  4. Keep the stone dry. Dry a damp stone slowly: 60 °C for 2 hours in a kitchen oven (the manual).
  5. Keep it covered when stored outside, and bring it in for snow, heavy rain and strong wind (Essentials Guide).
