Set it up: direct, indirect or two zones

The Smart Grid System for each cook

The set-ups in Monolith's Pro 2.0 manual (pp. 03, 12, 17 and 19) and quick start guide. The Smart Grid System is a metal frame on the fire ring with a ring that hooks into its eyelets, carrying two half deflector stones, two half drip trays and two half grates.

  1. For direct heat, grill straight over the glowing coals on the stainless grid (or the cast-iron grate, an accessory), with no deflector stones in.
  2. For indirect heat, put both halves of the deflector stone in, straight over the hot coals: the heat moves out round them and cooks gently, like a convection oven.
  3. For direct and indirect at once, use one half stone and one half drip tray: the side without the stone cooks direct (the manual).
  4. Or put the divider in the charcoal basket (not shown here) and fill and light only one half (the manual).
  5. Hook the ring into the eyelets at the height you want: with the half grates the system gives up to five levels, four of them adjustable (the manual).
  6. For pizza and bread, the pizza stone (an accessory, not shown here) goes in over the fire; the manual takes it up to 400 °C.

For the charcoal, see light it; for the vents, control the temperature.
