Cook it well: perfect beef ribs

Season, set up indirect at 120 °C

Monolith recipe: "Perfect beef ribs" from Monolith's own recipe pages (by Julian Schmitt, @carnivorgrill), with the set-up from the manual. On the Junior's 33 cm grid, one short rack fits.

  1. Trim the beef ribs and season them with salt and pepper, or a beef rub.
  2. Fill the charcoal straight into the firebox for a long cook (the manual) and light it.
  3. Set the deflector stone on its lift on the fire ring for indirect heat, with the grid on the lift's upper hooks (how).
  4. Bring the grill to about 120 °C and let it settle. Close down early: see the vents.
  5. Lay the ribs in the middle of the grid and close the lid.
  6. Add smoking wood through the chip feeder at the same time.

Wrap after 5 hours, cook 4 more, rest

Monolith recipe, continued.

  1. Smoke the ribs for a good 5 hours at about 120 °C.
  2. Burp the lid, open it and lift the ribs out onto a board.
  3. Wrap them in butcher paper with 50 ml of apple juice.
  4. Put them back for about 4 more hours at 120 °C, about 9 hours in all.
  5. Lift them out and rest them 10 to 15 minutes.
  6. Cut between the bones. Then shut the grill down.
