Clean burn (pyrolysis)
The clean burn: 400 °C for 10 minutes
The quick start guide and the manual call it pyrolysis: burning food residue to ash.
- Take out the grid, the deflector stone with its lift, and any cast iron.
- Check there is enough charcoal, and light it.
- Open both vents fully and close the lid. Stay with the grill.
- Let it reach 400 °C and hold it there for 10 minutes. Do not let it go higher.
- Close the draft door and the cap and let it cool.
- When it is cold, rake out the ash and brush any residue out of the lid.
If you must open it during a burn
- Open a small gap and wait a moment before opening further, or the fire can flare back out (the manual calls it backfire).
- Wipe fat off the gasket before a burn. The 2019 FAQ: do not let fat drip onto it.
- The thermometer's red zone, "Danger to unit", starts at about 400 °C. Stay out of it.
Open the lid 4 to 5 cm first and wait a moment so air flows in slowly, standing to the side in gloves (the manual).
