Control the temperature
The draft door and the cap
The draft door lets air in, the cap lets it out. From the manual.
Do not let it overshoot for a low cook: coming down from very hot takes a long time.
Once at temperature, close the draft door to about 1 to 2 cm.
Fine-tune with the slide on the cap.
Open either vent for more air and more heat; close them to bring it down.
Adjust the vents in gloves or with tongs: they get very hot.
The manual gives a usable range of 80 to 400 °C. Monolith publishes no table of vent positions against temperature.
The Guru port and kill plug
Every Pro 2.0 has the port low on the left of the base. Without a fan, keep the kill plug (221034) in it, or air leaks in.
With a fan, Monolith's 2019 FAQ (written before the Pro 2.0) closes the top vent to about ¾, starts with a small fire and keeps the dome shut at the start.
The Guru Edition (a separate model with a blower box) has its own steps in the manual: draft door closed, grill brought to temperature first, blower off when not in use.
