It lights, then goes out when I let go of the dial

Burners with a flame failure device (shown in the Australian manual; the UK B2B burner) need the dial held in for up to 60 seconds after it lights, until the device lets go (Australian manual). The standard UK and EU home burner probably has no such device; if yours goes out anyway, treat it as the flame went out.
