Control the temperature
Heat, the thermometer and the wind
One control: the dial sets the flame between high and low.
- Heat up on high until the thermometer reads 300 °C (572 °F): about 20 to 30 minutes on gas, depending on the weather (help centre).
- Read the dial as the floor temperature: its probe sits below the stone (Wood Burner manual).
- Turn the dial down to hold a lower heat. Gozney gives no table of dial positions.
- Stay below 500 °C (950 °F), the oven's maximum (Gozney's store).
- Keep the back of the oven to the wind: strong wind can blow out the flame or push heat out of the back (2016 book).
- Put nothing in bigger than the mouth, no plastic or glass, and never cover the burner (2016 book).
