Clean the stone

Clean the stone by heat

The stone is fixed in place: it cannot be lifted out or flipped. Gozney's 2016 book: the oven "gets so darn hot that it incinerates every little bit of grime during the next firing". No chemicals, no abrasive methods.

  1. Leave burnt bits for the next firing: run the oven on high and the heat burns them off.
  2. Once the oven is cold, sweep ash and flour out of the mouth with a non-metal brush.
  3. Leave dark patches: marks on the stone after use are normal (warranty).
  4. Never use water, soap or chemicals on the stone. Caustic cleaners void the warranty.

Gozney gives no brush for the Roccbox; the non-metal brush is Gozney's advice for its Arc Lite stone. Wire and brass brushes, which some retailers suggest, go against "no abrasive methods".
