Light it and turn it off

Light the gas burner

Outdoors only for home use. Never in a building, garage, tent, vehicle, boat, or under a balcony or deck. Never cover the oven mouth while it is lit, and never cover the slots and holes in the base or the dock (no foil): the fumes contain carbon monoxide (the manual).

  1. Check the wedges are out, the leak test has passed, the mouth is clear and the door is off, then open the cylinder valve.
  2. Press the control dial in and turn it anticlockwise to 9 o'clock, until it clicks and the burner lights.
  3. Turn on to 7 o'clock and hold the dial in for up to 30 seconds, so the flame failure device warms up and lets go.
  4. Push the dial firmly in and release it.
  5. No flame within 5 seconds: turn the dial off and wait 5 minutes before you try again. After 3 failed tries, contact Gozney.
  6. Check the flame is yellow and rolls along the roof, then set it from low to high with the dial.

Turn it off, and if the flame goes out

The manual (p. 50).

  1. Turn off the cylinder valve first, so the gas left in the burner and pipe burns away safely.
  2. Wait 3 minutes.
  3. Turn the control dial back to off, the dot at 12 o'clock. The regulator can now come off.
  4. If you take the hose off, put the cap back on the gas inlet.
  5. Leave the oven where it stands to cool for at least 3 hours before you move, touch or cover it.

If the flame goes out while you cook (wind, an empty cylinder): If the flame goes out, turn off the cylinder valve and wait 5 minutes before you relight. The UK/EU manual says leave the control dial alone until then; the US manual says turn the dial off as well.
