Cedar-plank side of salmon (not pizza)
A non-pizza dish: Gozney's "Cedar Plank Cooked Side of Salmon" ("Dome makes it super simple"). Written for the original Dome; the Gen 2 notes are this guide's.
- Cure a side of salmon trimmed to the plank with 8% of its weight in salt and 4% in caster sugar, covered in the fridge for 8 hours; soak a cedar plank for 6 to 8 hours.
- Heat the oven to about 350 °C (700 °F) with a medium to medium-high flame, on gas or wood.
- Lay the salmon skin down on the plank in the centre of the stones.
- Push a meat probe into the thickest part and plug it into port I.
- Turn and rotate the plank with a peel or tongs for 10 to 15 minutes.
- Take it out at 51 °C (125 °F) in the middle for medium.
