Control the heat

One dial, gas only

The manual (pp. 8, 16, 24, 27 and 39). The dial runs from high, just after lighting, to low as you turn it anticlockwise. Gozney gives no table of dial positions.

  1. Set the flame with the dial: 9 o'clock is high, 7 o'clock is low.
  2. Read the oven heat on the display's bands: Neapolitan pizza at 430 to 480 °C.
  3. Keep the mouth away from the wind, with any wind break over 45 cm away.
  4. Never cover the mouth while the flame is lit. There is no door for the Arc.
  5. Never burn wood or charcoal, and never use gas and wood together.
  6. Do not overfill it or cover the burner; put in nothing bigger than the mouth, and no plastic or glass.
