Calibrate the thermometer

The boiling-water check

  1. With the EGG cold, open the dome.
  2. Take the clip off the stem inside the dome and draw the thermometer out from the front.
  3. Put the tip in boiling water, not touching the pan.
  4. It should read 100 °C (212 °F), a little less high up.
  5. If not, turn the nut on the back of the dial until it does.
  6. Check it in ice water, then boiling again, to be sure it returns to 100 °C.
